Benefit: High in fiber and vitamin C, the vareities cultivated at First Light Farm are of the sweet and mild variety, but the hotter pepper varieties have been used medicinally to increase metabolism, reduce inflammation, aid in digestion and help kill cancer cells.
Storage Tips: Store whole peppers unwashed in the refrigerator for up to one week. If they are stored longer, peppers may lose their crispness, flavor and begin to grow mold.
Cooking and Preparation: Remove the stem and seeds from the pepper and slice into long strips to add into stir fries, salads, or on top of pizza. Dice into small pieces and saute with onions, garlic and spices as a base for homemade chili or refried beans.
