all these steamy nights are really getting the crops to grow rapidly.  its not the worst problem to have, but still, there are issues....  i'll spare ya.

so the Crop of the Week is EGGPLANT.   its very pretty.  if anybody is actually reading this,  go ahead and post a "comment".   give us your favorite eggplant recipe!  

a few have asked about the white salad turnips they got.  they are good raw, eat them like an apple.

The Quote of the Week-   "Thanks for the wonderful stuff each week! It is like a big present every Thursday when we pick up our box!    Everything is so yummy!!!!

I love the produce! I used last week's eggplant in Ratatouille (dinner for 6), and in Baba Ganoush (which I ate all by myself!) This week, I'm looking forward to making Eggplant Parmesan and Moussaka.

Would love a few tomatoes to go with that awesome basil!

I was creative and created something different. I cut the eggplant into thin slices and sauted the eggplant and cut up chicken breast in olive oil. After the chicken was cooked through I then added the greens from this week's produce. I added a can of rotelle tomatoes and a can of stewed tomatoes and cooked until the greens were done. It came out pretty good.

Had a craving for Indian so I made Baignan Bharta - love it when we go out, but didn't think it would be that easy to make at home! YUM :)

I used my summer squash, zucchini and eggplant for pizza. I sliced each lengthwise, brushed with basil olive oil, and grilled until marked and soft. Then took premade pizza crust (Iggy's), spread with some boursin, arranged the grilled vegetables next, and topped with goat cheese and fresh mozzarella. Baked at 450 degrees for 20 minutes (until cheese on top is bubbly/starts to brown). I topped with chopped fresh basil after baking. Very good and, although two steps, very easy.
